Vegetarian soup with crushed peas
Pea soup without meat tastes no worse than soup with ham.

Servings: six
You will need:
- two teaspoons of refined olive oil
- One medium onion, finely chopped
- one finely chopped celery
- two medium size carrots - they must be cut to length, and then cut into 1-1 pieces height 5 cm
- salt and pepper
- two cup cold water
- four cups of vegetable broth without fat
- two cups of crushed peas
Preparation:
- Heat the olive oil

- Fry for two or three minutes, onions, carrots and celery

. Season with salt and pepper.
- Pour in the broth and water pan, pour the peas. Bring to a boil.
- Reduce heat, cover the pan and cook over moderate heat for 45 minutes until the soup becomes thick.

Advice
They get a beautiful pea soup.
At the end of cooking, add to the soup a few finely chopped tomatoes. You can try to add one or two teaspoons of vinegar or lemon juice for a new taste.
