Ingredients
For the sauce
- 1/3 Art. olive oil (extra virgin)
- 1/3 Art. fresh basil leaves
- 1 roughly chopped shallots
- ½ h. L. salt
- pepper to taste
For the kebabs
- 1 small melon
- 6 balls of mozzarella cheese
- 6 slices of Spanish ham jamon or prosciutto Italian
- toothpicks.
Recipe
:
For the sauce, mix the olive oil, basil leaves, shallots and salt in a blender or food processor until smooth. Add pepper to taste.
Peel and clean the seeds from the melon, cut into several wedges. Each wedge is cut in half, to get large chunks.
Cut the slices of ham (or prosciutto) in half lengthwise.
Collect skewers in the following order: 1 piece of melon, 1 slice of jamon (pre-rolled into a wide tube), 1 ball of mozzarella

- 2 ripe tomatoes, halved
- 1 trimmed rack of lamb (about 450 g)
- 2 shallots
- 2 peeled potatoes of medium size
- 2 tbsp white wine
Recipe
Preheat the oven to 200º C.
Chop the garlic, put it in a small bowl (better - a mortar) and season with ½ tsp salt and the same amount of pepper. Crush pestle until a paste. Add chopped herbs and half the olive oil. Takeout.
Wash the tomatoes, cut into halves. Grease a baking dish or baking sheet and put it up tomato pulp. Sprinkle 1/3 of cooked mixture of garlic and herbs. Takeout.
Wash rack of lamb and dry wipes. Cut in half.
Sprinkle with remaining ¼ tsp salt and the same amount of pepper.
Preheat a frying pan 1 tbsp olive oil. Fry the lamb on all sides. Takeout.
Cut the potatoes into thick slices about 0, 6 cm. Peel and finely chop the shallots.
