In the second half of the XIX century, a young French chef Lucien Olivier, who has lived for several years in Moscow, decided to open a restaurant. Following the Russian tradition, he called his brainchild restaurant. Soon he realized that his company lacks something special, a French flair. And then a young Frenchman began to cook French cuisine, familiar to him from childhood. And as a sauce he used an improved recipe of mayonnaise.
